Culinary Cascade 2025: Meghalaya to Celebrate Its Rich Culinary Heritage with 3-Day Event from May 1

SHILLONG, April 18: A three-day event celebrating Meghalaya’s rich culinary and cultural heritage, dubbed Culinary Cascade 2025, will be held at the picturesque Ward’s Lake in Shillong starting May 1. Organised by the State Tourism Department, the event seeks to reconnect communities with their roots, bridge generational gaps, and honour traditional wisdom.

The celebration will showcase local farm produce grown through both traditional and hydroponic methods. Visitors can explore a diverse range of locally produced spices, tea, coffee, and brews. Traditional street food delicacies such as dohsnam, ktung, and shanaiong will be served in both authentic styles and contemporary formats.

Adding a modern twist to the experience, the event will also feature trending international food items like boba tea, ramen, Korean cuisine, progressive baking, and innovative locally inspired snacks such as BYOChips and Hotspud.

Organisers highlighted that Culinary Cascade 2025 aims to focus on indigenous knowledge, sustainability, and fostering close relationships with local farmers. The spotlight will remain on the flavours, stories, and cultural practices that shape Meghalaya’s identity.

“Culinary Cascade will not only recognise the regional elements but also draw inspiration from international cuisines culminating in an elevated fusion of local and global,” the organisers stated.

The event will also include live cooking demonstrations by renowned chefs and culinary institute associates. Guests will gain insights from practitioners of smoked meat and fermented food, explore innovations in the culinary space, and take part in engaging discussions with chefs, professors, and food writers.
